Our Beginning
A Dream Realised
Launceston Distillery was founded in 2013 by Chris Condon, Chris Byrne, Rob Carroll, Peta Dolan, and Ilya Brucksch. Inspired by the traditions of Scottish single malt whisky, they set out to create a distillery that reflects the purity and character of Tasmania.
Hangar 17 proved to be an ideal location, although it required significant upgrades. With the support of family and friends, who later became additional shareholders, the founders raised the funds needed to bring the distillery to life.
Tasmania’s pioneering still maker, Peter Bailly, was engaged to custom build the stills and brewing equipment. Today, the two copper pot stills remain the centrepiece of the distillery, standing as a testament to Peter’s craftsmanship.
Production began in 2015 with a focus on authenticity and attention to detail. Every decision since has been guided by a simple principle: to create the finest Tasmanian single malt possible.

Our Home – Hangar 17
A Dream Realised
Our distillery is located in historic Hangar 17 at Launceston Airport – Tasmania’s oldest surviving aviation building. Constructed in 1932, it was the state’s main passenger terminal until 1968.
Since 2013, we have preserved and adapted this remarkable space into a working distillery. Today, it is home to our stills, casks and bottling – a place where tradition and innovation sit side by side.
The Legacy – Caledonian Distillery
Reviving Launceston’s Whisky Heritage
Launceston’s first whisky distillery, the Caledonian Distillery, was established in 1824 and became one of the colony’s foremost distilleries. In 1839, the Distillation Prohibition Act was enacted, outlawing the distilling of spirits across the island. Since 1992, when the law was changed to allow modern-day distilleries, Tasmania has been home to a growing number of producers. Launceston Distillery is the first traditional whisky producer in Launceston to gain a production licence since the Caledonian closed.
